Some of our favorite friends here at Friends are snacks (duh). And we love a good Gluten Free recipe. Sooooo...imagine our excitement when FOF (and Emma's Husband!) whipped up these GF Tahini Brownies. We LOVE a tahini genie.
1 cup dark choc chips
1/2 cup coconut oil
Between 2-4 tbs tahini
2 Eggs
2/3 cup Sugar
1 Tbsp Vanilla
1/4 cup cocoa powder
1/4 cup + 1 Tbsp cassava flour + 1
Heat 1/2 cup chocolate chips, coconut oil and tahini over a double boiler. In stand mixer Separately mix together eggs, 2/3 cup sugar and 1 Tbs vanilla for a minute. Then slowly pour in melted chocolate mixture. Mix for another minute on high. Then change to low, and slowly pour in cocoa powder and 1/4 cup cassava flour. Toss the second 1/2 cup dark chocolate chips with 1 tbs cassava flour (so it doesn’t sink to the bottom of the mixture) and add to batter. Fold gently with spatula (don’t overblend). Grease up a baking dish, cover with parchment paper that hangs over edge (for easy lift out) and pour in batter. Drizzle tahini over top to taste. Bake at 350 for 20-25 mins. Take out and let rest for 15 mins. Optional - add in coconut flakes! Enjoy!
